In the rcouch approach, SM is downloaded and built during the build process.
This obviously wouldn't benefit from pkg-config.

For the bigcouch approach, it really depends if reliable and correctly
build 1.8.5 are available that have the right compile flags. At least at
one point, the Debian 1.8.5 build had incorrect compile-time flags that
prevented the build from working correctly. This should be fixed now, but
it does make me wary of changing this AT LEAST until we are able to link
against SM > 1.8.5.

I will JIRA this with the provision we should fix the couchjs build against
newer SMs first.
