Potential workaround: 
For changing display name (TARGET_NAME in Xcode Build Settings), and bundle id (PRODUCT_BUNDLE_IDENTIFIER
in Xcode Build Settings) you could write hooks that modify the build.xcconfig.  OR You could
use this plugin: https://www.npmjs.com/package/cordova-custom-config
