This issue has a different cause and solution than I thought.

Apparently it is *not* possible to disable iCloud backup by a setting in config.xml. If I
am not mistaken, *all* Cordova iOS apps are generated with iCloud backup enabled.

So it is up to the app developer to make sure that s/he is very careful about which files
may be automatically backed up.

I would still like to see a way for iCloud backup to be disabled for a Cordova iOS app, and
would prefer to see this be done by default.
