I changed the code to this and it works like a charm now:

List<IrcUser> users = new ArrayList<IrcUser>();		
Digester digester = new Digester();
digester.push(users);
digester.addObjectCreate( "users/user", IrcUser.class );
digester.addSetProperties("users/user");
digester.addSetNext( "users/user", "add" );

try {
   digester.parse(configFile);
   System.out.println(users);
} catch (IOException e) {
   throw new ModuleException(e);
} catch (SAXException e) {
   throw new ModuleException(e);
}
