I just recognized that changing

   beanReader.registerBeanClass(Instructor.class);
   beanReader.registerBeanClass(Instructors.class);

to

   beanReader.registerBeanClass(Instructors.class);
   beanReader.registerBeanClass(Instructor.class);

gets betwixt working as expected. So currently the order in which the 
beans are registered seems to be important.
