This feels a little specific. Namely:

Random tag of name random text, containing random number of attributes, each of random text,
and random number of sub tags, each of random subtext. 

Perhaps an example in the Javadoc would be useful. I'm not seeing a good generic feature.

Alternatively the request is for XML safe random text. In that case, running the random text
through xml escape would seem the way to go.
