Add this to your web.xml:

<init-param>
    <param-name>work-directory</param-name>
    <param-value>WEB-INF/work</param-value>
</init-param>

Generated Java will then be in 
WEB-INF/work/org/apache/cocoon/www/<context-path>/<page>.java
