cvs diff -u path/file > file.diff

Yes, WinCVS is indeed reliable and works like a charm for me. I use 
1.3b13 at the moment.

Antonio's proposal CygWin is a bit to much for a normal diff as you 
install a complete linux environment. If you don't need other features I 
would not install it.
