Well the answer is to put the URL of your servlet in the sitemap :

<map:pipeline>
    <map:match pattern="servlet.html">
     <map:generate src="http://localhost:8080/alexcocoon/AlexServlet" 
/>  <!-- servlet that gives an XML response -->
     <map:transform src="stylesheets/simple-page2html.xsl"/>
     <map:serialize type="html"/>
    </map:match>
</map:pipeline>
