That's cause you're using the wrong serializer.

Add this to your map:serializers:

<map:serializer name="text"   mime-type="text/plain" src="org.apache.cocoon.serialization.TextSerializer"/>

Then do this in your pipeline:

<map:serialize type="text"/>
