Use selected="selected" and use this <?cocoon-format type="text/html" />
and you will get simply selected in your output.
HTML serializer do several changes to your html:
<br /> -> <br>
<li>Something</li> -> <li>Something
and some more else.

Some will accept (IE), some won't.
