Subject Using different encodings with Cocoon 1.7.4

As we have a multilingual site with pages using 
different encodings (both Latin 1 and Latin 2)
we are faced with the problem how to switch
between these encodings on the fly.

We solved the problem to either display
Latin 1 or Latin 2 characters by setting the options

processor.xsp.encoding
formatter.text/html.MIME-type
formatter.text/html.encoding

in cocoon.properties (of Cocoon 1.7.4).

But how are we able to switch between the
encodings 8859_1 and 8859_2?
