Add the namespace xmlns:java="http://xml.apache.org/xalan/java" in your xsl, and use something
like

<xsl:variable name="generatedLink"  select="java:foo.bar.YourClass.yourMethod"/>

This is probably what you want. Furthermore, the right place for your question would be the
cocoon user group rather then that of the cocoon developers : users@cocoon.apache.org
