We face the same issues (using Cocoon 2.1.7) because we want to generate a plain text auto-reply
email which contains the entered form data.
We had to write all jx templates in a rather ugly form to minimize (but could not eleminate
completely) all additional whitespace, by chaining all XML elements without any space or linefeed
in between.
Unfortunately this is not really easy to maintain.
