I just went ahead and did it ... put Friday's date.
Doesn't matter if we are one day out. It might be
Friday somewhere in the world.

Just followed the first part of
http://wiki.apache.org/cocoon/CocoonReleaseHowTo
... the rest of the instructions about docs
there might need to change a bit now.
