It's on by default... The only thing I add to my pages in Cocoon are  
these two headers:

Expires: Wed, 01 Jun 2005 13:07:31 GMT
Cache-Control: max-age=600

But even without those, with these:

> CacheDefaultExpire 600
> CacheIgnoreCacheControl On
> CacheIgnoreNoLastMod On

(Especially CacheIgnoreNoLastMod) it will cache for 600 seconds...
