This is already possible.  The following pipeline automatically mounts 
sitemaps in subdirectories:

  <map:pipeline>
      <map:match pattern="*/**">
          <map:mount uri-prefix="{1}" src="{1}/"/>
      </map:match>
  </map:pipeline>
