I am now re-trying with the following configuration:

Basic zone using a VMware Fusion private network
Host OS at 172.16.140.1
DNS at 172.16.140.2
Ubuntu (for NFS secondary storage) at 172.16.140.5
XenServer at 172.16.140.6
System VM range at 172.16.140.30 to 172.16.140.40
User VM range at 172.16.140.50 to 172.16.140.60
