I hate to admit it, but I use maven to get the classpaths right in Eclipse:

  	<dependency>
  		<groupId>org.apache.cassandra</groupId>
  		<artifactId>cassandra-all</artifactId>
  		<version>1.0.6</version>
  		<type>jar</type>
  		<scope>compile</scope>
  	</dependency>
  	<dependency>
  		<groupId>org.cassandraunit</groupId>
  		<artifactId>cassandra-unit</artifactId>
  		<version>1.0.1.1</version>
  		<type>jar</type>
  		<scope>compile</scope>
  	</dependency>
