You don't need to specify a schema, but chances are you want to burn through a number of scenarios
this allows you to do it in a single well defined way.  We could allow you to just specify
an existing keyspace and table as well but your queries would fail because the stress tool
knows nothing about the shape of your data.  You would need to write into the existing schema
first.
