isset isn't going to help.  I ran into this when implementing the feature.  isset returns
true for any unset field that has a default value.  The only way to do this properly is to
first obtain the CfDef from the server, modify it, then send it back (especially for those
fields that don't have a default and null is interpreted as valid).

EDIT: A ugly approach that I turned down first would be to send a map of values to the server
and only values in the map are updated.
