if you configure in xml, then it ought to be
<bean id="myCustomWriter" class="xxx"/>

And then in Camel data format something a like
<jaxb id="jaxb" xmlStreamWriter="#myCustomWriter" .../>

Though data formats is a bit different than components but the idea should be the same that
# can be used.
