Yes, add a mapper to the task, something like (untested)

<unzip src=3D"zipfile.zip" dest=3D"c:/tmp">
  <patternset>
    <include name=3D"/**/e/**/*"/>
  </patternset>
  <regexpmapper from=3D".*/e/(.*)" to=3D"e/\1"/>
</unzip>
