Yes and no.  For yes, see my answer to 2, for no, see the answer to 3.

Ant 1.6.3 will allow you to specify multiple classes (using nested
<class> elements), but that won't solve the problem of getting there
from a fileset.

Yes, <pathconvert> is your friend.  Translate the fileset into a
property and use that.  Use "," as pathsep.

I agree.  Native support for filesets would be the cleanest solution.
