The only possibility that springs to mind for current
versions of Ant is to define your patterns in lines of
a textfile, e.g. "foo", and then set up two
patternsets:

<patternset id="my.special.files" includesfile="foo"
/>
<patternset id="un.special.files" excludesfile="foo"
/>
