<jar> task has update attribute that according to its
docs says
update: indicates whether to update or overwrite the
destination file if it already exists. Default is
"false".

You can set it to true and do something of the kind
<jar update="true" destfile="yourold.jar">
    <fileset basedir="dir_with_your_new_classes">
        <include name="**/*.class">
    </fileset>
</jar>
