The best advice :
move the non CVSed files to another directory.
Then the creation of your ant task should be easy.

In the future, what would be good would be to create selectors allowing to
sort in a fileset :

- the files which are under source control (CVS, Perforce, SourceSafe, ...)
- the files which are not under source control (like your monkey brains)

It would be cool also to have selectors finding which files are "healthy"
vis à vis source control and which ones are locally modified,
including which ones are "renegades", ie have not been formally checked out
but are really modified, ...
