I had a similar problem some weeks ago converting a path full of 
jars to something I could use to copy them. I came up with defining
a new variable that could be used as input for the includes 
attribute of a fileset:

<pathconvert property="gnf.jars" refid="gnf-commons" pathsep=",">
	<map from="${basedir}${file.separator}" to="" />
</pathconvert>
<copy todir="${dist.lib}" flatten="true" verbose="true">
	<fileset dir="${src.dir}" includes="${gnf.jars}" />
</copy>

you should be able to adapt your problem ...
