Without actually looking into the code, I think the includes attribute
of <fileset> is considered to be the second selector.

Does

 	<fileset dir="${proj.working_folder}/ejb-temp/classes">
         <and>
           <filename name="**/*.class"/> 
           <selector refid="proj.selector.dms.classes"/>
         </and>
       </fileset>

do what you want?
