You are - see <mail>'s encoding attribute.  You may not specify the
encoder, but one will be used (and Ant will tell you which).

There will certainly be a limit, but it depends on so many parameters
that it is impossible to tell you what it will be.

If you've run into that limit, try granting more heap memory to Ant
(i.e. set the ANT_OPTS environment variable to something like -Xmx128m
or so) or explicitly chose a different encoder.
