If you are running on Windows, use "start" for your executable name.
I'm not sure how to exactly do this with the correct syntax for the exec
task, but for example:

start java -jar foo.jar

Will return immediately, doing what you expect.

On unix, depending on the shell naturally, you can append "&" and it
will be a forked process.
