<execon> doesn't know how to tell the executable that it should
 put the archive into "x.zip", all that ant will do is put the
 whatever zip sends to the screen, into the "x.zip" file.

You want:
 	<execon dir="d:/" executable="zip" output="zip.log">
 	  <arg value="-r"/>
	  <arg value="x.zip"/> 
 	  <fileset dir="d:/buildx"/>
 	</execon>
