I have been doing lots of fileset manipulations
via javascript <script> tasks.

I generally create a new one, by calling the
createDataType('fileset') method of the current
project object.

You can then add paths and includes, etc., to the
fileset.

I would highly suggest browsing through the Ant
java source code.  Look at Project.java and
FileSet.java, etc...It turns out that you can do
all kinds of stuff via javascript, as if you were just
using the Ant classes as a class library.
