Patrick,

Run ant using the -debug switch and look for the 'os.name' property to determine the format
of the OS option.

This only answers half of your question, as I am unsure how Ant makes the ultimate determination
of the OS name.  Perhaps someone else can come to the rescue here?

does anyone know how ant determines the operating system?  and what is the
