I tried a little bit more:

I you specify an <include> all other files are NOT included. Therefore
you don´t have to specify the
   <exclude name="*.jsp"/>
   <exclude name="*.java"/>

But your include was wrong:
   <include name="**/*.class"/>
The leading **/ is nessecary if your files are not in the basedir of
the fileset ...
