The equivalent for

find . -name "*.bat" -print | grep -v "ejb/" 

is

<fileset dir="."/>
  <include name="**/*.bat" />
  <exclude name="**/*ejb/**/*" />
</fileset>

In addition to this 'old' approach, Ant 1.5 has Selectors, which can be 
extended, if necessary, to suit your needs.

However, wrt the ">> .tarfiles" part, I need to understand why you want to do 
that.
