You might be able to do this by using
AccumuloInputFormat/AccumuloOutputFormat.setMockInstance instead of
setZooKeeperInstance.  If you want to see some examples, look for usages of
setMockInstance in
core/src/test/java/org/apache/accumulo/core/client/mapreduce/.
